My trip to Italy has filled my mind with imagination, inspiration and wonder. Imagination for what could be. Inspiration for what is. And wonder for all that we know and do not know—ancient history, knowledge, philosophies, truths... Which to me, seem so deeply spiritual, scientific and natural.

In today’s world, we tend to forget our history. The Renaissance was the period following the Dark Ages. Not so long ago! There’s so much forgotten knowledge, forgone for the hottest trends, influences and the perfect insta caption.

Time to come back to our roots. Our humanity. And discover truths greater than ourselves 💛

This may just be my favourite restaurant on the planet.

One of the things I realized on this trip is that I’m rarely looking for “perfection”. Nobody is perfect. Naturally, mistakes are made, things happen—we are human after all!

No. What I’m looking for is heart. That is the key ingredient to everything of worth. Without it, whether it be food, clothing or other, it just falls flat.

The simple attention given to people, no matter where you’re from, is beyond everything.

Nice has been a place we’ve enjoyed so very often. It’s a place I find most pure. Simple. Clean. Happy. Easy... Home away from home.

When I realized that we were an hour away from the When I realized that we were an hour away from the small town of Panzano in Chianti, I knew we had to visit @dariocecchinimacellaio’s butcher shop.

I sent a message to Officina della Bistecca around 9 in the evening to reserve a seat for 2. My heart was beating, and FOMO was kicking in. Please, please, please food gods... let there be room! A short while later, I received an email, a glorious confirmation to one of the best highlights of our trip.

Now, you might not know this about me, but I don’t really eat meat. Mostly vegetarian, with fish and chicken. Occasionally, I’ll have a piece of quality, organic, farm-raised meat. And to my delight, what I found on your menu—an option kindly dedicated to those who prefer to eat green (though I definitely had a few bites—out of this world!) 🌱

To be a butcher, and to offer a vegetarian option shows such a respect for people. To allow friends and family of all tastes to have a seat at your table and enjoy a convivial meal together. Without pretention, without judgment, just lots of good food, good wine and good company. My kind of place.

We didn’t come here because you were on Chef’s Table, or your celebrity. We came here because we saw your heart, the love you have for people and respect you have for animals. Your ambiance, spirit and work ethic is at the heart of what we love and try to inject in our respective fields as well.

When I shared about our visit in my stories, I received so many messages from people you have touched. People who cried watching your Netflix show (confession: I may have cried a little too). People who love your story, the food you make, the joy you bring, the heart you share. And that big, joker-like smile and belly laugh so many of us have come to love.

Eating at Officina Della Bistecca was more than a meal. It was an experience of true passion, mastery and sincerity. Something I will keep in my heart for a long, long time to come. Thank you for having us. Hope to see you again, macellaio. But until then, CARNE DIEM! 🤘❤️🥩
